Spicy Garlic Noodles

  • 3 bundles "ribbon" or wide, flat Chinese noodles

  • 4 cloves garlic, minced

  • 2 tbsp. soy sauce

  • 3 tbsp. black vinegar

  • 1 1/2 tbsp. chili oil

  • 1 tbsp. sesame seeds

  • 1 tbsp. crushed red pepper flakes

  • 5 tbsp. oil

  • 1 tsp. schezuapn peppercorns

  • 1 cucumber, peeled and thinly sliced

  • In a bowl, whisk together the garlic, soy sauce, black vinegar, chili oil, sesame seeds, and crushed red pepper flakes.

  • Bring a pot of water to a boil on the stove and cook the noodles as directed on the package.

  • Heat the oil in a pot over medium-high heat. Add in the peppercorns and turn heat down to medium. Then pour the sauce mixture in and cook for about a minute, stirring.

  • Toss the noodles in the spicy garlic oil, top with cucumber, and enjoy!
