Breakfast Casserole

INGREDIENTS:

  • 1 can of biscuits (we will only be using 6)

  • 1 lb. breakfast sausage

  • 12 oz. package of bacon

  • 5 eggs

  • 1/2 cup milk

  • 8 oz. Mexican blend cheese

  • 1 package of country gravy

INSTRUCTIONS:

  • Preheat oven to 350ºF. Spray a 9x11in. baking dish with cooking spray.

  • Cut the biscuit dough into quarters and place them evenly in the bottom of the baking dish. Set aside.

  • Heat a frying pan over medium-high heat and add in the bacon. Cook until crispy and then remove to a plate lined with paper towels and set aside.

  • Remove all but one tablespoon of the leftover bacon grease from the pan.

  • Add in the sausage over medium-high heat and brown.

  • Sprinkle the browned sausage over the top of the biscuit dough in the baking dish.

  • Roughly chop the bacon and layer it over the other ingredients in the baking dish, being sure to spread it all around evenly.

  • In a bowl, whisk together the eggs and milk. Pour the mixture into the baking dish.

  • Sprinkle the cheese evenly over the top of the casserole.

  • Prepare the package gravy according to the instructions on the package, then pour it evenly over the cheese.

  • Place into the oven and cook for 40 minutes.

  • Remove and let stand for 5-10 minutes. Serve & enjoy!
