Pulled Pork Taquitos with Avocado Salsa

Leftover pulled pork sitting in your fridge? Turn it into these mouthwatering pulled pork taquitos! Oh, and don't forget the toppings!


Did I hold this plate over my balcony on the third story just for the gram? Yes, yes I did.


 

PULLED PORK TAQUITOS WITH AVOCADO SALSA

 

INGREDIENTS:

  • 3/4 lb. pulled pork

  • 6 tomatillos, husked

  • 1/2 white onion

  • 1 jalapeño, stem removed

  • 1/2 cup of water

  • handful of cilantro

  • 12-15 corn tortillas

  • 2 avocados, diced

  • 2 cloves of garlic, minced

  • salt and pepper to taste

  • oil for frying

  • crema, shredded iceberg lettuce, and cilantro for serving

INSTRUCTIONS:

  • Sauce the tomatillos, white onion, and jalapeño in a pan over medium heat until browned. Then add half a cup of water to the pan and cover, cooking until the tomatillos are soft.

  • Pour all of the ingredients from the pan into a blender with a large pinch of salt and a handful of cilantro and blend until smooth.

  • Heat the pulled pork in a pan over medium low heat. Then add half of the salsa mixture to the pan, mix, and continue to cook until heated thoroughly.

  • Fill the bottom of a pan with out a half inch of frying oil and turn the heat to medium.

  • Once the oil is hot, roll the pulled pork mixture in tortillas and place the open side down in the oil with a spatula.

  • Press down on the taquitos with the spatula to ensure that the taquitos stay in place and become sealed.

  • Flip and fry until golden brown on all sides, then set aside on a cooling rack or a plate lined with paper towels. Repeat with remaining pork and tortillas.

  • In a bowl, mix the remaining salsa with the avocado, garlic, and a large pinch of salt.

  • Place the taquitos over a bed of shredded iceberg lettuce and top with the avocado salsa, crema, cilantro, and lime.

  • Serve and enjoy!
