Pulled Pork Sliders

Pork is a very versatile protein and pulled pork sliders are always a hit! Especially when paired with a tangy slaw and a side of lemony kale chips!



 

Pulled Pork Sliders

A sweet and tangy dish that is sure to please!


 

PREP: 10 min. COOK: 20 min. TOTAL: 30 min.

 

INGREDIENTS:

For the pulled pork:

  • 3 pieces pork tenderloin, cut into 2" slices

  • 2 tbsp. chili powder

  • 1/2 cup BBQ sauce

  • 2 tbsp. spicy brown mustard

  • Hawaiian slider buns

For the slaw:

  • 1 package slaw mix

  • 3/4 cups mayonaise

  • 3 tablespoons cider vinegar

  • 2 tbsp sugar

  • salt and pepper to taste

For the kale chips:

  • 1/2 bag kale chips

  • 1 tbsp. olive oil

  • 1 tbsp. salt

  • 2 slices lemon

INSTRUCTIONS:

For the pulled pork:

  • Add steamer insert to large saucepot filled with 2 inches water; cover and heat to boiling.

  • Rub pork tenderloin with chili powder and 1⁄2 teaspoon salt; add to steamer.

  • Reduce heat to maintain simmer; cook pork, covered, 20 minutes or until tender. Cool slightly; with hands, shred pork, then toss with barbecue sauce and spicy brown mustard.

  • Pour slaw mix into a large bowl.

  • In a separate bowl, whisk together the mayonnaise, cider vinegar, sugar, and some salt and pepper, and then add to the cabbage mixture.

  • Mix well to combine. Taste for seasoning; adjust with more salt, pepper or sugar as needed.

For the kale chips:

  • Preheat oven to 350ºF.

  • Put 1/2 a bag of kale onto a baking sheet and drizzle with olive oil. Mix to coat.

  • Season with salt and bake for 15-20 minutes or until crispy.

  • Drizzle with lemon juice and serve.
