Ever wonder what to do with all of those leftovers from the backyard barbecue you had this past weekend? Look no further- because in about 15 minutes, those leftovers can be transformed into the perfect tacos for Taco Tuesday!
*LEFTOVER* PORK RIB TACOS
PREP: 10 min. COOK: 5 min. TOTAL: 15 min.
INGREDIENTS:
5 leftover pork ribs
2 limes, cut into wedges
1/2 head of cabbage, shredded
tortillas
queso fresco, optional
INSTRUCTIONS:
Run a sharp knife down the rib bone to release the meat from the bone. Repeat until all of the rib meat has been removed from the bones.
Once all of the meat has been removed, cut the strips of meat into bite-size pieces.
Heat a skillet over low heat and add in the meat. Stir occasionally. Note: The goal is not to cook the meat, as it has already been cooked- just to warm it.
In the meantime, heat some of the tortillas up in a pan or over the flame on the grate of a gas stove until slightly crisp.
Once the meat has warmed up, turn off the burner and squeeze in about 1 teaspoon of lime juice. Mix well to combine.
Add the rib meat to the tortillas and top liberally with cabbage and queso fresco.
Serve warm with a wedge of lime.
