Fiesta Steak Salad

A great way to turn that leftover steak in your fridge into a crisp and delicious salad.





  • 2 to 3 cups leftover steak

  • 2 tablespoon taco seasoning

  • salt and pepper to taste

  • 1 cup ranch dressing

  • 1/3 cup salsa, red or green (I used a chipotle salsa for a it of smokiness)

  • salad greens

  • bell pepper, sliced

  • carrots, sliced

  • avocado, sliced


  • Heat a skillet with about a tbsp. of olive oil over medium-high heat. Add the beef and taco seasoning and cook until heated through. Taste, and adjust seasoning as needed.

  • Combine ranch and salsa.

  • Fix a bowl with salad greens, top with veggies and steak, then drizzle Mexican Ranch over the top. Serve and enjoy!
