A great way to turn that leftover steak in your fridge into a crisp and delicious salad.
FIESTA STEAK SALAD
INGREDIENTS:
2 to 3 cups leftover steak
2 tablespoon taco seasoning
salt and pepper to taste
1 cup ranch dressing
1/3 cup salsa, red or green (I used a chipotle salsa for a it of smokiness)
salad greens
bell pepper, sliced
carrots, sliced
avocado, sliced
INSTRUCTIONS:
Heat a skillet with about a tbsp. of olive oil over medium-high heat. Add the beef and taco seasoning and cook until heated through. Taste, and adjust seasoning as needed.
Combine ranch and salsa.
Fix a bowl with salad greens, top with veggies and steak, then drizzle Mexican Ranch over the top. Serve and enjoy!
