  • 4 cups brown sugar

  • 6 limes, squeezed

INSTRUCTIONS:

  • Preheat oven to 325ºF.

  • Remove the packaging from the ham and score a diamond pattern on the rind. Place in a baking pan with a rack. Fill the bottom of the pan with about a 1/3 cup of water. Cover with foil and bake for about 30 minutes while you prepare the sauce.

  • Once the sugar has dissolved, remove the pan from the heat and squeeze in the lime juice. Stir to incorporate.

  • After 30 minutes of baking, remove the ham from the oven and discard the foil. Increase the temperature of the oven to 425ºF. Glaze the ham with about 1/3 cup of the sauce being sure to get the sauce in all of the cracks. Return the ham to the oven, uncovered, and bake for another 15 minutes.

  • Remove the ham from the oven again and glaze with another 1/3 cup of the sauce and some of the pan juices. Return to the oven for another 15 minutes.
