Quick and Easy Miso Soup

This miso soup is super quick and easy and only requires a few ingredients!

 

QUICK AND EASY MISO SOUP

 

vegan-vegetarian-friendly

 

INGREDIENTS:

  • 4 cups vegetable broth

  • 1 sheet nori (optional)

  • 3-4 tbsp. white or yellow miso (here's the like to the one I used)

  • 1/2 cup chopped green chard or other sturdy green

  • 1/2 chopped green onion

  • 1/4 cup firm tofu (optional)

INSTRUCTIONS:

  • Place vegetable broth in a medium sauce pan and bring it to a boil.

  • In the meantime, place 3 tbsp. of miso in a small bowl with a bit of hot water and whisk until smooth (this helps to prevent clumping when it is added to the soup). Set aside.

  • To your broth, add chard/or other vegetable of your choosing, green onion, and tofu (if using). Cook for 5 minutes, then if using, add nori and stir.

  • Remove the pan from the heat and add in your miso paste, stirring to combine.

  • Now, taste your soup. if you think it needs more punch, go ahead and add that extra tablespoon of miso, or a pinch of sea or kosher salt.

  • Serve the soup while warm, it's best served fresh. Enjoy!
