This miso soup is super quick and easy and only requires a few ingredients!

QUICK AND EASY MISO SOUP

INGREDIENTS:
4 cups vegetable broth
1 sheet nori (optional)
3-4 tbsp. white or yellow miso (here's the like to the one I used)
1/2 cup chopped green chard or other sturdy green
1/2 chopped green onion
1/4 cup firm tofu (optional)
INSTRUCTIONS:
Place vegetable broth in a medium sauce pan and bring it to a boil.
In the meantime, place 3 tbsp. of miso in a small bowl with a bit of hot water and whisk until smooth (this helps to prevent clumping when it is added to the soup). Set aside.
To your broth, add chard/or other vegetable of your choosing, green onion, and tofu (if using). Cook for 5 minutes, then if using, add nori and stir.
Remove the pan from the heat and add in your miso paste, stirring to combine.
Now, taste your soup. if you think it needs more punch, go ahead and add that extra tablespoon of miso, or a pinch of sea or kosher salt.
Serve the soup while warm, it's best served fresh. Enjoy!
