Everyone loves fried rice. It can be used as a side dish or amped up with some protein to e turned into a meal.
FRIED RICE
PREP: 5 min. COOK: 10 min. TOTAL: 15 min.
INGREDIENTS:
4 cups cooked leftover white rice (at least one day old. If fresh grease a baking sheet and pack the rice onto it. Cook for 20 minutes on 400º.)
1 tbsp. soy sauce
2 eggs
1/3 ag frozen peas and carrots
1 tbsp. sesame oil
salt and pepper to taste
INSTRUCTIONS:
In a large skillet or wok, heat sesame oil on medium high heat. Add in rice and fry until slightly crispy.
Add soy sauce to the rice and incorporate. Move the rice to one side of the pan.
On the other side crack the eggs in the pan and scramble with chopsticks. Mix the scrambled eggs with the rice.
Add in the peas and carrots and season with salt and pepper.
Top with green onions and serve.
