Chicken Pot Pie

Another dish that is fantastic for a cold day or if you just need some comfort food. This recipe is super easy and requires minimal work.



 

CHICKEN POT PIE

 

PREP: 15 min. COOK: 45 min. TOTAL: 1 hr.

 

INGREDIENTS:

  • 1/3 cup butter

  • 1/2 cup chopped onion

  • 1/3 cup all purpose flour

  • 1 tsp. poultry seasoning

  • 1 tsp. salt

  • 1/2 tsp. pepper

  • 1 1/2 cup chicken broth

  • 2/3 cup milk

  • 3 cup cooked, shredded chicken

  • 1 package frozen mixed vegetables

  • 1 package Texas Pie Dough Puck®

INSTRUCTIONS:

  • Preheat oven to 400º.

  • Melt butter in a large skillet. Add onion and cook until tender.

  • Add flour, poultry seasoning, salt and pepper. Cook, stirring, until blended, creating a roux.

  • Slowly add chicken broth and milk, cooking and stirring until thickened and bubbly.

  • Stir in chicken and frozen vegetables.

  • Follow directions on Texas Pie Dough Puck® package and roll out the dough.

  • Spoon mixture into a pie pan lined with crust. Top with second crust; seal and flute edges. Cut slits in crust.

  • Bake at 400° for 30 minutes. Remove from oven and cover edges with foil to prevent over-browning. 

  • Bake for an additional 15 minutes.

  • Let rest for 10 minutes before serving.
