Cauliflower Goat Cheese Gratin

This is probably one of my favorite, truly indulgent side dishes. My mom has been making it for years and I absolutely love it. This cauliflower gratin is insanely creamy and has a really nice bite due to the goat cheese and parmesan. I hope you guys love it as much as I do!

 

CAULIFLOWER GOAT CHEESE GRATIN

 

PREP: 15 min. COOK: 30 min. TOTAL: 45 min.

 

INGREDIENTS:

  • 1 head cauliflower, cut into florets

  • 2 cups heavy cream

  • 1/2 lb. Monterrey Jack cheese, grated

  • 2 cups grated parmesan

  • 6 oz. goat cheese, cut into small pieces

  • salt to taste

  • freshly ground pepper to taste

INSTRUCTIONS:

  • Preheat oven to 400ºF.

  • In a baking dish, layer the cauliflower, heavy cream, and 3 cheeses evenly.

  • Season the dish with salt and pepper.

  • Roast for 25-30 minutes or until the cauliflower is fork tender and the sauce has slightly thickened.

  • Remove from the oven and let the dish rest for at least 10 minutes, which will allow the sauce to thicken a bit more.

  • Serve warm and enjoy!
