As the perfect appetizer or accompaniment to any Italian meal (or just on a hot day), bruschetta is light, crisp, and so refreshing!

INGREDIENTS:

  • baguette, sliced to your liking of thickness

  • basil, sliced

  • roma tomatoes, diced

  • 1 garlic clove, 1/2 grated, reserve other half

  • 1 tbsp. onion, diced (you don't need much)

  • liberal pinch of salt

  • freshly ground black pepper

INSTRUCTIONS:

  • In a bowl combine the basil, tomatoes, grated garlic, onion, salt, and pepper. Mix well to combine and set aside.

  • Toast your slices of baguette. The key here is to toast the bread more than you normally would, as it allows it to remain sturdy and crunchy even after the bruschetta is added.

  • While your bread is still hot, drizzle it with some olive oil and a bit of salt. Then take the other 1/2 of the unused garlic and rub it all over the surface of the bread. Trust me on this one.

  • Top with the tomato mixture and serve.

  • Enjoy!
