Bill Miller's *Copycat* Green Beans

I am obsessed with Bill Miller's green beans. I don't know how to explain them but they are that tomato-y, stewed type, ya know? Anyways, not sure what to call them but they're delicious, so I copied them and now you can too. :)

I used fresh green beans which didn't affect the flavor or texture, but dramatically increased the cooking time so in the recipe I have listed canned green beans as the better, quicker option.



 

BILL MILLER'S *COPYCAT* GREEN BEANS

 

INGREDIENTS:

  • 1/2 package of 16 oz pkg of Bacon, chopped into small pieces

  • 1/4 yellow onion, chopped

  • 1 clove garlic, mined

  • 1 can 14.5 oz can petite diced tomatoes with their juice

  • 3 cans 14.5-16 oz green beans, Italian or regular cut

  • salt and pepper to taste

INSTRUCTIONS:

  • Fry bacon in large stockpot until fat and juice begin to release.

  • Add onion and garlic, saute until onion starts to turn color.

  • Add tomatoes with their juice and simmer for about 5 mins.

  • Drain off most of the green bean juice and add green beans to pot. You may have to add some water to cover. (I drained all the juice and added 14.5 oz can of beef broth.)

  • Simmer 20-25 mins on med-low heat.
