Chicken kebabs are very simple to make and are the perfect compliment to a light and filling meal.
MARINATED CHICKEN KEBABS
3 chicken breasts, cut into 1 inch cubes
2 red bell peppers, cut into 1 inch pieces
2 yellow bell peppers, cut into 1 inch pieces
1 red onion, cut into 1 inch pieces
cherry tomatoes, optional
1 cup of Zesty Italian Dressing
Place the chicken, pepper, onion, and tomato pieces into a ziplock bag, or in a bowl with Zesty Italian Dressing and marinate for at least 30 minutes.
If using wooden skewers, let them soak in water while the chicken marinates so they don't burn in the oven.
Preheat an oven to 425ºF.
Thread the chicken, peppers, and onions on the skewers with a combo of peppers, tomatoes, and onion in between the pieces of chicken.
Place the kebabs on a foil lined baking sheet and bake for 10-15 minutes. Flip and bake for another 10-15 minutes until cooked through.
