Leftover Pot Roast Sandwiches

Yet another idea for those pot roast leftovers! These sandwiches are super savory and 100% satisfying. Topped with sweet caramelized onions, pungent Swiss cheese, and a tangy spicy mustard aioli, you'll find it hard to resist going back for seconds.


 

LEFTOVER POT ROAST SANDWICHES

 

PREP: 10 min. COOK: 30 min. SERVINGS: 4 sandwiches

 

INGREDIENTS:

  • 2 tsp. Olive Oil

  • 1 Medium Yellow Onions, sliced

  • 1 ½ cup Leftover Pot Roast, Warmed

  • 4 Slices Swiss Cheese

  • ¼ cup Mayonnaise

  • 1 tsp. Spicy Mustard

  • 4 dinner rolls/French rolls (I used the Mini Kaiser Rolls from H-E-B's Bakery)

INSTRUCTIONS:

  • Heat the oil in a non-stick skillet over medium low heat. Add the onion slices and toss to coat with the oil. Cook for 20-30 minutes, stirring occasionally, until the onions are soft and golden brown. Set aside.

  • Preheat oven to 350°F.

  • Slice the rolls in half. In the same pan, add a bit of olive oil over medium-low heat and toast the buns until golden brown.

  • Pile each one with the pot roast, caramelized onions, and Swiss cheese.

  • In a bowl, whisk together the mayonnaise and mustard. Slather about one tablespoon of sauce on each sandwich.

  • Wrap the sandwiches in foil (or just cover the baking sheet tightly with foil) and return to the oven for 5-10 minutes, or until cheese is melted and sandwiches are hot. Serve immediately.
