This is my super easy and delicious go-to recipe for salsa verde. It is great on its own, as a condiment, or as enchilada sauce! Hope you enjoy!
SALSA VERDE
PREP: 10 min. COOK: 5 min. TOTAL: 15 min.
INGREDIENTS:
5 tomatillos, husked and rinsed
1/2 bunch fresh cilantro, chopped
2 cloves garlic
1/4 onion
jalapeños (1-3 depending on how spicy you like it. You can also sub Serranos for a bit more heat)
salt to taste
olive oil
INSTRUCTIONS:
In a frying pan over medium-high heat, slowly sauté the tomatillos, onion, and jalapeños with some olive oil for about 5 minutes.
After 5 minutes, add the garlic and continue cooking until the tomatillos are slightly browned.
Remove from the heat and blend the ingredients with the salt and cilantro in a blender. This can be done in batches if your blender is not big enough.
Blend until your desired consistency. If you would like a thinner salsa, add small amounts of water and blend until you reach your desired consistency.
