This recipe for Italian Chicken Spaghetti with Red Wine Sauce is absolutely delicious, but requires a decent amount of time to prepare and cook- especially, if you are making the stewed tomatoes from scratch.Though well worth the wait, be sure to begin cooking about 1 and a half to 2 hours prior to when you want to serve it.
ITALIAN CHICKEN SPAGHETTI WITH RED WINE SAUCE
PREP: 15 min. COOK: 1-1.5 hr. TOTAL: 1.45 to 2 hr.
INGREDIENTS:
for the Italian chicken:
2 chicken breasts
1-2 tsp. olive oil
2 tsp. Italian seasoning
salt and pepper
for the red wine sauce:
1/2 lb. Italian sausage (I used hot pork game sausage that I already had)
1 sweet onion, chopped
4 garlic cloves, minced
1 (28 oz.) jar stewed tomatoes (I made mine from scratch- recipe below)
1 cup full-bodied red wine
1 (6 oz.) can tomato paste
1/4 cup fresh basil, chopped (if using dried, use 1/3 of the amount)
1 1/2 tbsp. fresh oregano, chopped (if using dried, use 1/3 of the amount)
1 1/2 tbsp. fresh thyme, chopped (if using dried, use 1/3 of the amount)
kosher salt & pepper to taste
1 lb. spagetti noodles
for the stewed tomatoes (if making from scratch):
5 beef or Roma tomatoes
1/8 cup of green bell pepper, chopped
1 tsp. salt
1/4 tsp. sugar
1/2 tsp. dried parsley
INSTRUCTIONS:
for the stewed tomatoes:
Bring a large pot of water to a boil, then plunge tomatoes in for 30 seconds. Remove and put in an ice bath.
Peel the tomatoes and discard the skins.
Dice tomatoes tomatoes to desired size.
In a large pot on medium heat, combine all of the ingredients and simmer for 30 minutes.
for the Italian chicken:
Preheat oven to 350°F.
Coat chicken breasts with olive oil, Italian seasoning, salt, and pepper.
Place on a foil lined tray and bake in the oven for 25-30 minutes, or until internal temperature reaches 165°F.
Let chicken rest for a few minutes and then chop it into cubes. Set aside.
for the red wine sauce:
Heat 1 tablespoon of olive oil in a large pot over medium high heat, brown ground Italian sausage (or spicy sausage of choice). Set aside.
Add a small amount of oil to the pan and saute garlic and onion until tender.
Add stewed tomatoes, tomato paste and wine. Bring to a boil over medium heat.
Using a potato masher or fork, slightly mash large chunks of tomato until smooth.
Reduce heat to low and add the cubed chicken, sausage, and fresh herbs. Simmer for 1 hour.
Boil spaghetti noodles according to package.
Serve sauce over noodles and enjoy!
